Crawfish…You boil them like crab or shrimp (with lots of Cajun spice in Louisiana) and with other stuff like small potatoes, corn and even sausage, whole onions or mushrooms. Keep it in an ice chest to stay warm (pictured) and then dump the whole thing out on a table covered in paper. Everybody sits or stands around the table and eats and lies until they are stuffed. Oh yeah, it can only be washed down with beer.
All the meat is in the tails so you break the tails off like shrimp. Some of the bigger ones will have some meaty claws that is worth the effort, like little baby lobsters The real hardy consumer of mudbugs will suck the juice out of the body after the tail is pinched off. In Louisiana, this is affectionately known as “sucking the head.”
This makes me hungry for home…
